This Saison ale is a complex blend of pilsner malts, wheat, hops and spices with a heritage in some of the oldest regions of beer making. The Saison style was mostly formulated in the French-speaking Wallonia region of Belgium as a seasonal beer of sustenance for farm communities. The beer was historically brewed in the colder seasons for consumption and storage in the warmer seasons.
The interpretation in this bottle was formulated with a combination of Fuggles, Saaz and EK Goldings hops, and Sterling in the hopback. Spices included ginger root, chamomile, jasmine, orange peel, anise and black pepper. The beer was fermented in two batches of yeast: Batch 1 – A classic strain of the Wallonian yeast producing earthy/spicy notes; Batch 2 – A blend of classic Saison and Belgian yeasts to create phenolic, earthy and clove like flavors.
